Preparing matcha without clumps

Fine matcha powder tends to clump, so sift it through a small sieve before mixing. Whisk it into a smooth paste with a little hot (not boiling) water, then top with steamed milk for a latte, or pour over cold milk and ice for an iced matcha. For baking, sift it in with the flour so the colour spreads evenly.

A 1 kg café pack lasts a while, so decant a smaller amount into an airtight tin for daily use and keep the main bag sealed. Light, heat and moisture dull the colour, so store it in a cool, dark cupboard.
