La Pavoni Cellini Evoluzione: a quieter, plumb-ready Cellini
From the front the Evoluzione looks close to the Classic, but the hardware inside is a clear step up. A rotary pump replaces the vibration unit, which brings lower noise and steadier pressure, and the pressure it delivers can be adjusted without opening the case. A stainless rail on top replaces the tinted cup tray.
Water supply your way
Run it from the 2.9-litre reservoir, or turn the selector and connect it to the mains through the supplied stainless braided hose. Either way, electronic sensors monitor the water level in the tank and the boiler and top the boiler up when needed.
Heat-exchanger boiler and gauges
The 1.8-litre copper boiler with a transversal heat exchanger lets you brew and steam together. La Pavoni quotes a warm-up of under five minutes. A SIRAI pressure switch regulates the boiler, and two dials on the front panel report boiler pressure and pump pressure as you work. Anti-burn steam and hot-water wands, an anti-vacuum valve and a manual-reset thermostat complete the safety package.
