Motta Milk Frothing Thermometer
Made in Italy by Motta, this dial thermometer clips onto the side of a milk jug so you can watch the milk temperature while you steam. The dial reads in both °C and °F from 0 to 100°C, and the stainless steel probe and clip are quick to wipe clean.
Using a dial thermometer while learning to steam
A clip-on thermometer is most useful while you are learning what correctly steamed milk feels and sounds like. Clip it on the side of the jug away from the steam wand so it does not get in the way as the milk spins. Dial thermometers react a little behind the real temperature, so many baristas stop steaming just before their target and let the reading catch up. After a few weeks you may find you can judge temperature by the feel of the jug and use the thermometer only to check. Rinse the probe straight after use so milk does not dry on it.

Getting the milk temperature right
For the most accurate reading, the stem should sit about halfway down into the milk. Stop steaming between 60 and 70°C for sweet, silky milk that hasn’t scalded. It suits any stainless steel milk jug used on an espresso machine.
