La Pavoni Cellini Classic: the straightforward way into heat-exchanger espresso
The Cellini Classic keeps things simple. It uses the same squared-off AISI 304 cabinet and press-forged chrome brass group as its rotary-pump sibling, but runs a 15-bar vibration pump from a removable tank, so there is no plumbing to arrange. A tinted cup rail on top keeps cups warm and in place.
How the boiler works
Inside is a 1.8-litre copper boiler fitted with a transversal heat exchanger. Brew water passes through the exchanger on its way to the group, while the surrounding boiler holds steam pressure, so you can pull a shot and stretch milk at once. A pressure switch keeps the boiler on target and a front manometer shows where it sits.
Safety built in
Electronic sensors track the level in the 2.9-litre reservoir and refill the boiler automatically. The steam wand and hot-water spout are both designed to stay cool to the touch, and an anti-vacuum valve plus a manual-reset thermostat protect the heating system.
