La Pavoni Diamantina: a dual boiler shaped like a cut gem
La Pavoni has been building espresso machines in Milan since the early 1900s, and the Diamantina is one of its most striking designs. The faceted body mixes polished stainless steel with gold-coloured panels, and a cup rail with gold stripes crowns the top. It is a semi-professional machine built for people who want the appliance itself to be a talking point.
Two boilers, two PIDs
Separate copper and brass boilers handle brewing and steaming, so each runs at its own temperature: 0.6 litres for coffee and 1.8 litres for steam. Dual PID controllers, with digital read-outs on the front panel, let you set both independently. A rotary pump supplies the E61 group from a removable 1.9-litre tank.
Pressure profiling built in
A paddle-style control on the group lets you vary brew pressure during the shot, ramping it up or easing it off to shape body and sweetness. The steam wand and hot-water tap are cool-touch, and gauges for pump and boiler pressure sit below the group.
