La Marzocco Leva lever machine: manual craft for the specialty bar
A lever machine puts the barista in charge of the most important part of a shot. On the Leva, pulling the arm drives the extraction mechanically, and the feedback through the handle tells an experienced operator exactly how the puck is behaving. Customers see it too, which makes the bar part of the experience. Each group can be worked independently, so a two- or three-group model lets several baristas pull shots side by side during a rush.
Engineering behind the lever
The frame combines cast iron with stainless steel for rigidity and heat retention. A dual boiler layout holds brewing water and steam at their own temperatures, so milk work and extraction run side by side. Because pressure and flow are adjusted by hand, a skilled barista can build profiles an automatic group simply cannot copy.
