La Pavoni Professional Leva Rame in copper and brass
“Rame” is Italian for copper, and this version of the Professional lever wears it proudly: a polished copper boiler on a brass base, brass group and fittings, and dark wooden knobs, lever grip and portafilter handle. It looks like an heirloom from the first day, yet it is a working espresso machine you operate entirely by hand.
How the lever works
Lifting the lever draws water from the boiler into the brew chamber; lowering it forces that water through the puck. You decide how fast and how hard to press, which makes every shot a little different and rewards practice.
Boiler, steam and safety
The 1.6-litre boiler runs at 0.7 to 0.8 bar under a pressurestat, and it is ready in roughly five minutes. A gauge and a glass level tube sit on the side, with a safety valve and a manual-reset thermostat in the background. The steam tap accepts an interchangeable pipe, and an automatic milk frother is available as an option.

Is the Leva Rame for you?
Choose it for a home kitchen or very small office where looks matter as much as the coffee. The chrome Professional Leva has the same internals in a plainer finish, and the Esperto Abile adds pressure profiling.
